Recipe: No-Bakes {Lactation Style}


If you turn to Pinterest for lactation promoting recipes - you will come across tons of different options to help get your juices flowin'. You will find more then enough different variations of cookies/brownies/baked goods that incorporate these 3 magical ingredients: fenugreek, brewers yeast and flaxseed. 

I kept coming across the oh so simple no-bake cookie lactation recipe. Luckily, I make some pretty mean no-bakes and I figured I would incorporate the three ingredients into my recipe. 





1. In a saucepan - boil sugar/cocoa/butter/milk to boil for 1 minute
2. Take off heat and stir in pb/vanilla
2. Once combined, add liquid mixture to oatmeal/flaxseed meal/brewer's yeast/fenugreek and mix 
3. Spoon onto wax paper and let cool 


TIPS
*brewer's yeast is different than baker's yeast 
*flaxseed meal or ground flaxseed will work
*both brewer's yeast and flaxseed meal can be found at your local health food store 
(but I also found flaxseed meal at Dillons)
*I used the fenugreek supplement capsules and opened them up to create 2 TBSP
(about 1/3 of the bottle) 


This is a super simple recipe that is deadly because it's so delicious! I'm sure you could add these 3 magical ingredients to just about anything - but what's the fun in it if they aren't sweet? Next time around I'm going to double the recipe just because I can and because I know I'll eat them. 

I've been chowing down on these the past few days (usually 1 cookie an hour or so before I pump) and I've seen an oz or two difference overall in what I'm pumping at work. It's not much but I'll take whatever extra I can get!

PS - If you don't want to make the cookies but still want to produce more milk, I was recommended by Kingston's Dr - A Mother's Love supplement. It's a combination of blessed thistle and fenugreek. 

PSS - If you make some cookies using the recipe above - you might as well finish off the fenugreek using the recommended dosage on the bottle.

Recipe: Lily's Pumpkin Cake



Are you tired of making the same ole, tried and true pumpkin pie for your Thanksgiving dessert? Don't worry, I've got you covered.  I was introduced to this delicious pumpkin cake and I'm sure this one will soon be the new family favorite. 


Pumpkin Cake


Cake
4 eggs
1 2/3 cup of sugar
1 cup crisco
15 oz can pumpkin
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp baking soda

Frosting:
3 oz cream cheese
1/2 cup butter or margarine 
1 tsp vanilla
2 cup powdered sugar


- In a bowl, combine eggs, sugar, crisco, and pumpkin and beat until fluffy.
- Combine flour, baking powder, cinnamon and baking soda. 
- Pour into lightly greased flour pan and bake for 40 minutes at 350 degrees. 
- Let cool, and then whip frosting ingredients and spread on top. 

Serve with a big glass of milk.

Recipe: Grandma's Cheesy Chicken Spaghetti


This was a go to favorite of my grandma's when we would come to visit because it's delicious, quick and can feed an army. I know I'm always looking for new recipes that can be done in the crock pot. So book mark this - you won't be disappointed! Plus, who doesn't love cheese and pasta? 

Cheesy Chicken Spaghetti




1 chicken or 4 boneless chicken breasts
2 cups chicken broth
1 lb velvetta cheese
1 can cream of mushroom soup
1 stick butter
1/8 tsp garlic powder
1 tsp worcestershire sauce
1/4 cup chopped onion 
1 10oz package of spaghetti 
additional optional ingredients: mushrooms, water chestnuts, zucchini 


- in a crock pot, add chicken breasts and chicken broth and let cook 
(I use frozen chicken breasts and leave mine on low all day and by the time I get home from work they are ready. If you don't want to use a crock pot you can boil the chicken.)
- cook spaghetti as package directs
- drain spaghetti, add in shredded chicken and all other ingredients and let simmer for 30-45 minutes. 
(I use the 2 cups chicken broth from the crock pot but if you want your spaghetti more 'soupy' add a little more. And because CT adoesn't like onion, I use 3 tbsp of minced onion flakes instead of the fresh chopped onion.) 


Serve this with a side of bread and it makes the perfect warm fall/winter meal.

Recipe: Shepherd's Pie (My Version)


Let me let you in on one of CT's favorite meals that we just so happened to stumble upon. You know those times where all the food on your plate get's intermixed and you now have one big item instead of three separate items?  Well thankfully that happened when we were having corn bread, mashed potatoes, and stroganoff. I'd say it was a concoction gone right! 

Shepherd's Pie
(My Version)




Bottom Layer
A box of Jiffy corn bread mix. 
Bake as directed. 
(family secret: we add about 2 tbsp sugar prior to baking)


Middle Layer
A box of Stroganoff.
Cook as directed. 


Top Layer
A box of instant garlic mashed potatoes. 
Cook as directed. 







As you can see here, we don't mind the easy/delicious/bad-for-you processed foods. You could definitely make this same concoction with home made stroganoff and home made mashed potatoes. 
But really... who has time for that these days??

Recipe: Graveyard Veggie Pizza


Last week at work, I was part of a committee hosting our 4th quarter birthday celebration. We chose to have a Halloween themed birthday lunch and I was in charge of decorations and a graveyard veggie pizza!

I took my inspiration from A Taste of Home:


but in my version I doubled the recipe and added a lot more goodies! 


Graveyard Veggie Pizza



Crust
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
1/4 cup plus 1 tablespoon canola oil

Topping
3 cups cottage cheese
1 packet of ranch dressing mix
1/2 cup mayo
1/4 cup milk
2 cups shredded lettuce
2 cups shredded cheese 
1 cup chopped broccoli
1 cup chopped cauliflower
2 cans chopped ripe olives
1/3 cup shredded carrots
1/4 cup chopped red onion
3/4 cup chopped banana peppers 
1 can green chiles 

Tombstones
1 package cream cheese
4 teaspoons sour cream
10 - 15 crackers

-------------------------------------------------------------------------

Crust
- combine flour, baking powder, and salt
- add milk and 1/4 cup oil, mix well
- shape into ball and knead 10ish times
- on a lightly floured surface, roll into a 15x10 rectangle 
-transfer into an ungreased pan.
-prick with a fork and brush with remaining oil
- bake at 425 for 14 minutes or until edges are lightly browned.
 (I noticed mine needed a little more time because I made it thicker)
- let cool completely before adding toppings


Topping
- combine cottage cheese, ranch dressing mix, mayo, and milk
- spread over crust 
- sprinkle with lettuce, cheese, broccoli, cauliflower, olives, carrots, onions, banana peppers, and green chiles


Tombstones
- beat cream cheese and sour cream until fluffy
- place mixture in a ziplock baggy
- cut a small hole in the corner of the bag or if you are fancy get out your cookie decorating tools
- decorate crackers 


Even though Halloween isn't my fave, I enjoyed whipping up the festive veggie pizza! I was nervous about making a homemade crust and bringing it to work after my first time of making it. Needless to say it was a huge hit and very delicious!

Recipe: The Perfect Pecan Pie


CT celebrated his 26th year of birth earlier this month, and I wanted to make him something special: pecan pie. I wanted to go for something unlike the traditional birthday cake. 
I had never made a pie so I took to the web to find the perfect recipe!
Here's my rendition of the Pioneer Woman's recipe. 

The Perfect Pecan Pie

(Picture taken prior to baking) 


1 whole Unbaked Pie Crust (I used a store bought frozen one)
1 cup White Sugar
3 Tablespoons Brown Sugar
1/2 teaspoon Salt
1 cup Corn Syrup
3/4 teaspoons Vanilla
1/3 cup Melted Butter (salted)
3 whole Eggs, Beaten
1 cup (heaping) Chopped Pecans

-------------------------------------------------------------------------

- Prepare your pie crust or if you purchased a frozen one like me let it thaw to room temperature
- Mix the sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together in a bowl = syrup mixture.
- Pour chopped pecans in the bottom of the unbaked pie crust. Make sure you have an even amount of little pieces and bigger pieces. (the little pieces are what crisp up on the top of the pie)
- Pour the syrup mixture over the top. Cover the top and crust gently with foil. Bake the pie at 350º for 30 minutes. Remove the foil, then continue baking for 30 minutes, being careful not to burn the crust or pecans.
 - NOTE: PIE SHOULD NOT BE OVERLY JIGGLY WHEN YOU REMOVE IT FROM THE OVEN. If it extremely jiggly, continue to bake it checking on it periodically. I learned quickly that this pie sets up after you remove it from the oven to cool, so it will still have some jiggle when it's done.
- Allow it to cool for several hours or overnight if possible. 
- Serve with a heaping amount of whipped cream and enjoy!

For my first time baking a pie, it turned out fabulous and CT loved it! 
He ate the whole thing in two days.

Recipe: Cayenne Crackers


Yesterday I posted about a delicious frozen bloody mary that would be perfect for a tailgate, and today I have the perfect snack to go along with it. When CT and I went to the Chiefs vs. Cowboys game a friend of mine brought some:

Cayenne Crackers


1 1/4 cup canola oil
2 tbsp crushed red pepper
1/4 tsp cayenne pepper
1 tsp garlic powder
1 package Hidden Valley Ranch Dressing
1 box of club crackers
2 gallon zip lock bags
-------------------------------------------------------------------------

- in a mixing bowl, combine the oil, spices, and ranch dressing
- stir well
- put 1/2 box of club crackers in a gallon ziplock bag with half the oil mixture
- put the remaining 1/2 box of crackers and oil in the other zip lock bag
- seal bags with air
-toss crackers and let sit for ten minutes
- continue to toss crackers every 10 minutes for 40 minutes



Serve and enjoy!

This is such a simple appetizer and would go well dipped in ranch or hummus. It has the perfect amount of salt and heat.

Recipe: Ooey Gooey Cake

Ooey Gooey Cake


1 box yellow cake mix
4 eggs
1/2 cup melted butter
8oz cream cheese softened
2 cups powdered sugar + extra for topping

-------------------------------------------------------------------------

-preheat oven to 350 degrees
-grease a 9x12 pan


1st layer
-mix together cake mix, 2 eggs, and butter 
-spread out in greased pan

2nd layer
-mix together cream cheese, 2 eggs, and powdered sugar
-pour over cake mix


-bake for 40-45 minutes
-sprinkle powdered sugar on top



This is a long time standing family favorite. I remember having this as a little girl at my cousins house. 
I love when food brings back such happy memories!

Recipe: Fried Egg & Avocado BLT

Fried Egg & Avocado BLT




3 slices of pre-cooked bacon
1 slice of tomato
1 egg
1 half an avocado 
1 slice of cheese 
2 pieces of bread
lettuce
mayo


-Toast your slices of bread

-In a greased skillet fry 1 egg
{I like mine with the yoke broke because it makes the sandwich less messy} 

- heat up your pre cooked bacon in the microwave as the package directs

-slice up your avocado and tomato 

-complete the sandwich by adding mayo, bacon, lettuce, tomato, fried egg, cheese, and avocado 




This is such a quick and simple dinner that is so delicious. 
I also love any recipe where I can get all the food groups in one dish!

Recipe: Breakfast Pie

Sausage Breakfast Pie



1 can jumbo biscuits
1 lb sausage, browned
5 eggs
Cheese 


-Preheat oven to 350

-In a greased pie pan, arrange biscuits on the bottom making sure they are around the edges of the pie pan as well. 

-Beat the eggs and add a pinch of salt & pepper. 

-After sausage is browned, drain grease and pour on top of biscuits. 

-Pour eggs on top of sausage. 

-Top with cheese to liking. 

- Bake for 24 minutes at 350. 

 

This is CT's favorite meal I make. You can never go wrong with a simple, delicious breakfast dish.

 This weeks washi tape craft was a gift I did for a good friend of mine who is getting married at the beginning of next month. She is a newbie to cooking and I wanted to give her some of my favorite go to recipes.

I wanted it to be a little bit more personal, so I purchased the recipe box from hobby lobby and up-cycled it.


I had to break out the cricut to make the red piece because when I tried to hand write her name, the marker smudged! 
I think it turned out better this way.



I decorated the edges of the divider cards with Washi Tape. So simple but it really gives it some pop. And it helps to color code the different categories. 



It's not super fancy but it's cute and functional and fun!
A little washi tape can really transform anything.

I then added in my recipe cards and wa-la!

Five for Friday {co-host}

Happy Friday everyone!! 

This week I'm teaming up with the lovely ladies below to co-host 
Five for Friday! 
Since my blog is a lifestyle blog, here are 5 things going on in my life!

1. I am currently in route to the Big-D {Dallas} and I'm looking forward to checking out the Container Store, H&M, and Charming Charlie. 
My husband and my wallet may not like it, but I'm a newbie to their stores and I'm excited to check them out!


2. I am patiently awaiting the arrival of my new chevron Erin Condren Life Planner. Each time I step foot into Hobby Lobby, Michaels, or Walmart I'm spending a little too much extra time in the scrapbooking/office supplies section. 
Since ordering my planner I have purchased new pens, new washi tape, new stickers, and new stamps to help decorate it! 
I'm obsessed. 



3. CT and I just finished up round two of fertility treatments which unfortunately was ineffective this cycle. Through all of this, Jeremiah 29:11 has been pulling on my heart strings. 


 Some day I'll write a post about the process we are going through, but I don't think I'm there yet. 
I just gotta keep on truckin' and have faith that our time is coming! 


4. This week I tried a new recipe thanks to Pinterest!

Taco Spaghetti was what I experimented with via So, How's It Taste?



CT is extremely picky with his foods but he ate this with no problems!
I followed the directions exactly except I added half a can of rotel and skipped the olives. It was delicious and we had left overs for days!


5. I'm counting down the days . . . 
4 days until our 2nd wedding anniversary!
 We will be celebrating in NYC for the week and I couldn't be more excited!
Shopping, baseball, fireworks, and food. 
What more could a girl ask for?

Good Friday Goodies


Happy Friday ya'll! TGIF! 

Things are getting super busy at my work right now. With the changing of seasons - everyone is wanting to get in to get all their cosmetic needs addressed: a little botox, laser hair removal, and some liposuction! 

Anyways, Good Friday has got me in the mood for some goodies. If only these goodies were flattering for my figure.

Oreo Bites Brownies !! 


Pinners says: Claims to be the best Snickerdoodle recipe. I liked them better than my own They aren't as flat and they were a lot more chewy than most recipes. 




YUMM! All these sweets are making my mouth water, especially the snickerdoodle cookies.
 Do you have any indulgences and if so what are they? My husband and I  has a huge sweet tooth so I'm always looking for some great new recipes. I also need some more options for when I'm instructed to bring a dessert dish to family functions. Thankfully, we are going out to eat for Easter dinner so that makes me safe until the 4th of July.

Shake Master

So much has been going on lately: end of school, graduations, birthdays, meetings, doctors appointments. I love when life is like this. Always on the go and busy.

I believe looking forward to something makes waking up the next day that much better. Sometimes though when we are always looking forward to the next thing, we don't enjoy the process or enjoy being present in the moment. As much as I like having things going on, I need to focus more on being patient and enjoying each and every day. 

This past weekend we attended a birthday party and a graduation party. This weekend we will attend 2 graduation parties and another birthday party. I love an excuse to get together with friends and family. 

Monday, my husband started the Body By Vi shakes to try and knock off a few pounds and get healthier. 


The cool thing about these shakes are that they WORK, they are super low calorie, and there are unlimited flavor options. I went online to see if I could find any recipes and I came across a blog that had so many different options. If interested, you can look here via.

Yesterday since we didn't have any of the sugar free pudding mix, almond milk, or any other ingredients we did a peanut butter banana shake and then a peach shake. CT is on the Transformation Kit this month so he is drinking 2 shakes a day and then can have whatever he wants for dinner. 

Today I made him a Banana Cheesecake shake and a Chocolate Banana shake. Both were made with almond milk as well as fresh banana. So delicious. You can just call me the shake master. After CT's 90 day challenge I will be a pro with the blender.

I can't wait to try many different variations from the list below. Thank you Living Smart Girl! First on the list is going to be cherry limeade probably made with sprite zero, cinnamon bun, and snicker-doodle.

After Glow Smoothie: 4 oz. (1/2 cup) pomegranate juice, 4 oz. (1/2 cup orange juice), 2 scoops Vi-Shape shake mix, 1 cup frozen pineapple & 5 ice cubes. Blend well in blender.
All Berry Delight: 8 oz. skim milk, 2 scoops Vi-Shape Vishake mix, 1/4 cup frozen raspberries, 1/4 cup frozen blackberries, 1/4 cup frozen strawberries, ¼ cup frozen dark cherries & 4 ice cubes. Blend well in blender.
Almond Joy: 8 oz. Silk Pure Almond milk, 2 scoops Vi-Shape shake mix, 1/2 tsp coconut extract, 1 chocolate flavor packet (or 1 Tbsp. cocoa powder) & 6 ice cubes. Blend well in blender.
Amaretto: 8 oz. Silk Pure Almond milk, 2 scoops Vi-Shape Vi-Shake mix, 1 cup frozen dark sweet cherries & 6 ice cubes. Blend well in blender.
Ambrosia: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, ½ tsp. coconut extract, ¼ cup pear slices, ¼ apple slices, ¼ cup frozen strawberries, ¼ cup frozen pineapple chunks, 1 peach flavor packet & 3 ice cubes. Blend well in blender.
Angel Food Cake: 8 oz. Almond milk, 2 scoops Vi-Shape Body By Vi Shake mix, ½ tsp. coconut extract, ½ tsp. vanilla extract & 3 ice cubes. Blend well in blender.
Apple Cider Smoothie: 6 oz. unsweetened apple juice (or cider), 2 scoops Vi-Shape shake mix, 1 orange flavor packet, 2 tsp. cinnamon, 1/2 tsp. vanilla extract & 6 ice cubes. Blend well in blender.
Apple Mango Freeze: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 3 Tbsp. unsweetened apple sauce, 1 cup frozen mango chunks & 6 ice cubes. Blend well in blender.
Apple Pie: 8 oz. Almond milk, 2 scoops Vi-Shape bodybyvi shake mix, 3 Tbsp. unsweetened apple sauce, 2 tsp. cinnamon, 1/2 tsp. vanilla extract & 6 ice cubes. Blend well in blender.
Banana Coconut Breeze: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1/2 small frozen banana, 1 banana flavor packet, ½ tsp. coconut extract, & 4 ice cubes. Blend well in blender.
Banana Kiwi Cooler: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1/2 small frozen banana, 1 banana flavor packet, ½ cup fresh kiwi slices (peeled), & 6 ice cubes. Blend well in blender.
Banana Cream: 8 oz. water, ¾ cup vanilla low fat yogurt, 2 scoops Vi-Shape shake mix, 1 small banana (6” inches), 1 tsp. vanilla extract, & 6 ice cubes. Blend well in blender.
Banana Nut Bread: 8 oz. Silk Pure Almond milk, 2 scoops Vi-Shape shake mix, 1 tsp. butter extract flavoring, 1 banana flavor packet, 1 tsp. cinnamon, ½ tsp. vanilla extract & 6 ice cubes. Blend well in blender.
Banana Spice: 8 oz. Silk Light Vanilla Soy Milk, 2 scoops Vi-Shape body by vi shake mix, 1 small frozen banana (6” inches), 2 Tbsp. ground flax seeds, pinch of cinnamon, pinch of nutmeg & 6 ice cubes. Blend well in blender.
Banana Split: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1 small banana (6” inches), 1 Chocolate flavor packet, 1 Tbsp. reduced fat peanut butter, & 4 ice cubes. Blend well in blender.
Berry Blast: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, ½ cup frozen blackberries, ½ cup frozen strawberries & 5 ice cubes. Blend well in blender.
Berry Peachy: 8 oz. Almond milk, 2 scoops Vi-Shape bodybyvi shake mix, ½ cup frozen peach slices, ½ cup frozen strawberries, 1 peach flavor packet & 5 ice cubes. Blend well in blender.
Berries & Cream: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, ½ cup frozen raspberries, ½ cup frozen strawberries, 1 strawberry flavor packet, ½ tsp. vanilla extract & 5 ice cubes. Blend well in blender.
Birthday Cake: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1 chocolate flavor packet, ½ tsp. butter flavoring (or butter buds), ½ tsp. vanilla extract & 6 ice cubes. Blend well in blender.
Blackberry Apple Slush: 6 oz. unsweetened apple juice, 2 scoops Vi-Shape vi-shake mix, 30 frozen blackberries & 7 ice cubes. Blend well in blender.
Blackberry Freeze: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 30 frozen blackberries & 4 ice cubes. Blend well in blender.
Blackberry Pie: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1 cup frozen blackberries, 1 Tbsp. Graham Cracker Crumbs, 1 tsp. vanilla extract & 6 ice cubes. Blend well in blender.
Black Raspberry Vanilla Cooler: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 15 frozen blackberries, 15 frozen raspberries, 1 tsp. vanilla extract & 4 ice cubes. Blend well in blender.
Blended Coffee: 8 oz. (1 cup) coffee-instant, regular, prepared with water, 1 ½ cup skim milk, 2 scoops Vi-Shape shake mix, 1 chocolate flavor packet & 4 ice cubes. Blend well in blender.
Blueberry Blaster: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 30 frozen blueberries & 4 ice cubes. Blend well in blender.
Blueberry Cheesecake: 6 oz. Almond milk, 2 scoops Vi-Shape vishake mix, 20 frozen blueberries, 1 tsp. graham cracker crumbs, 2 oz. fat-free cream cheese & 5 ice cubes. Blend well in blender.
Blueberry Lemon Freeze: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1 cup frozen blueberries, 1 Tbsp. sugar-free instant lemon pudding mix, & 5 ice cubes. Blend well in blender.
Blueberry Mango Smoothie: 8 oz. Almond milk, 2 scoops Vi-Shape shake mix, 1 cup frozen blueberries, ½ cup frozen mango chunks, & 4 ice cubes. Blend well in blender.
